She does a lot of cutting, slicing and chopping and this knife (Shun Classic 7 In Hollow Ground Santoku Knife), is perfect. She likes that it has a 6.5 inch blade because it is much easier to handle than the more traditional 8 inch knives. She also said that the slightly smaller size in no way hinders her use of it. Chopping onion is a big thing for her and she likes to be able to do it as quickly and neatly as possible to avoid issues caused by the fumes and this shun knife performs beautifully. She did mention that the knife probably wasn’t a good choice for left handers due to its D shaped design, but for her it was perfect. She thinks her Shantoku was a great purchase and plans on purchasing more Shun knives in the future.
